To make these cupcakes really feel like a Moscow Mule in dessert form, we added ginger beer to the cupcake batter. It's an easy hack that lets you skip the eggs, oil, and water that the box calls for and gives you all of the gingery flavor you love. Don't worry, we put the vodka in the frosting.

Ingredients

box vanilla cake mix
- 1
(12-oz.) can ginger beer
- 1/2 tsp.
ground ginger
- 1 cup
(2 sticks) butter, softened
- 4 cups
powdered sugar
- 1/4 cup
vodka
- 2 Tbsp.
lime juice
- 1 Tbsp.
lime zest
Lime slices, for garnish
Fresh mint, for garnish
Directions
- Step 1Make cupcakes: Preheat oven to 350° and line two muffin tins with 18 cupcake liners. In a large bowl, combine cake mix, ginger beer, and ground ginger. Divide between cupcake liners and bake until a toothpick inserted in middle of cupcake comes out clean, 18 minutes. Let cool.
- Step 2Make buttercream: In a large bowl using a hand mixer, beat butter until fluffy. Add 3 cups powdered sugar and beat until no lumps remain, then add vodka, lime juice and zest and beat again until combined. Add remaining cup of powdered sugar and beat until fully combined.
- Step 3Pipe onto cupcakes and garnish with a wedge of lime and a sprig of mint.
