Molten Peanut Butter Bundt Cake

Ingredients
- 1 box chocolate cake mix
- 1 (3.4 oz.) package chocolate instant pudding
- 1 cup water
- 1/2 cup vegetable oil
- 4 large eggs
- 2 1/2 cups peanut butter chips
- 1/4 cup smooth peanut butter
- 1 cup heavy cream
- Cocoa powder, for dusting
Directions
- Step 1Preheat oven to 350° and grease a bundt pan with cooking spray.
- Step 2In a large bowl, add cake mix, pudding, water, oil, and eggs. Beat with a hand mixer until smooth, then pour into prepared bundt pan. Bake until a toothpick inserted into the cake comes out with minimal crumbs, about 45 minutes.
- Step 3Let cake cool in pan for 10 minutes, then carefully invert onto a cooling rack to cool completely.
- Step 4Meanwhile, make peanut butter ganache: Place peanut butter chips and peanut butter in a large, heat-proof bowl. In a small saucepan over medium-low heat, heat heavy cream just until it begins to bubble, about 5 minutes. Pour hot cream over peanut butter chips and peanut butter. Let sit 5 minutes, then whisk constantly until smooth. Let sit until beginning to thicken, about 20 minutes.
- Step 5Transfer cake to a serving platter, fill center with ganache, letting ganache overflow slightly to cover the sides of the cake in drips. Let sit 15 minutes more. Dust all over with cocoa powder and serve.
