Who doesn't love a good spoonful of edible cookie dough? This pumpkin-pie inspired version is one of our favorites.
*While some experts say it's okay to eat raw flour (as long as it hasn't been affected by recalls), the FDA warns against it. Some suggest heat-treating the flour, by cooking it in the microwave or oven, to kill off any bacteria, before using it in any no-bake treat.

Ingredients
- 1/2 cup
butter, room temperature
- 1 cup
granulated sugar
- 1 1/2 cups
pumpkin puree
- 1 tsp.
pure vanilla extract
- 1 1/4 cups
all-purpose flour*
- 2 tsp.
pumpkin pie spice
Pinch kosher salt
- 1 cup
mini chocolate chips
Directions
- Step 1In a large bowl using a hand mixer, cream together butter and sugar until smooth and fluffy. Add pumpkin and vanilla and mix until smooth.
- Step 2 Add flour and pumpkin pie spice, and season with a pinch of kosher salt. Mix until smooth.
- Step 3Fold in chocolate chips and place in a bowl for serving.
