Forget the classic pumpkin spice latte—this pumpkin spice slow-cooker oatmeal will be your new morning pick-me-up. Heartier than a latte and a pastry, this pumpkin spice recipe is the hearty breakfast you need when you want to stay full and satisfied all morning long. We love using the slow cooker to make holiday meals and weeknight dinners alike easier on us, but it's also perfect to make breakfast a breeze. If you're feeding a crowd for a fall breakfast or Thanksgiving brunch—this oatmeal is just the thing to whip up. Simply toss all your ingredients in the slow cooker, and let it do the work for you!
We love topping this oatmeal with a drizzle of maple syrup, a dash of cinnamon, or chopped pecans, but feel free to top it with whatever you please! If you want to make this oatmeal the night before then heat up throughout the week, store in an airtight container in the fridge for 3-4 days.
