Ingredients
- 2
heads cauliflower, cut into florets
- 2/3 cup
marinara
kosher salt
Freshly ground black pepper
- 2 cups
shredded mozzarella, divided
- 2/3 cup
freshly grated Parmesan, divided, plus more for garnish
- 1/2 cup
sliced black olives
- 1/2 cup
pepperoni, divided
- 1 Tbsp.
oregano, divided
- 2 tsp.
crushed red pepper flakes, divided
Fresh parsley, for garnish
Directions
- Step 1Preheat oven to 350°. In a large bowl, combine cauliflower with marinara and toss until fully coated. Season with salt and pepper.
- Step 2Place half the cauliflower in your baking dish, and top with half of the mozzarella, Parmesan, olives and pepperoni. Sprinkle with oregano and pepper flakes.
- Step 3Add the rest of your cauliflower to the baking dish and repeat the topping process.
- Step 4Bake until cauliflower is tender and cheese is bubbly, 30 minutes.
- Step 5Let cool slightly, garnish with parsley and Parm and serve.
