Craving tacos, but not so into tortillas? Not to worry, these taco tomatoes totally deliver on Tex-Mex flavor, with a lot less carbohydrates (~7 in a tomato versus ~75-100 in a tortilla!). If you’re looking for an easy low-carb meal or a family-friendly, lighter take on your Tuesday night go-to, this summery take is the twist you should try. Best part? They’re super customizable! We kept things simple with ground beef, taco seasoning, and classic toppings like sour cream and iceberg lettuce, but the sky’s the limit.

How to make taco tomatoes:
No matter what you're filling them with, here's how to make them: simply flip your tomatoes so they're stem side down on the cutting board. Using a sharp serrated knife, give your tomatoes three cuts, but not quite to the bottom so the tomato stays intact. Then, stuff away!

Variations:
Feel free to get creative and fill yours with anything from ground chicken or turkey to vegetarian options like mushrooms or beans, then go even wilder with your toppings—guac, pico, queso, and more would all be welcome here.

Ingredients

  • 1 Tbsp.

    extra-virgin olive oil

  • 3/4 lb.

    ground beef

  • 1

    medium onion, chopped

  • 1

    (1-oz.) packet taco seasoning

  • 4

    large, ripe beefsteak tomatoes

  • 1/2 cup

    shredded Mexican cheese blend

  • 1/2 cup

    shredded iceberg lettuce

  • 1/4 cup

    sour cream

Directions

    1. Step 1In a large skillet over medium heat, heat oil. Add onion and cook, stirring, until soft, 5 minutes. Add ground beef and taco seasoning. Cook, breaking up meat with a wooden spoon, until no longer pink, 8 minutes. Drain fat. 
    2. Step 2Flip over tomatoes so they’re stem-side down and slice to make 6 wedges, being careful not to cut all the way through. Carefully spread open wedges. 
    3. Step 3Divide taco meat among tomatoes, then top each with cheese, lettuce, and sour cream before serving.
