Skinny Cheeseburger Casserole

Whole-wheat pasta, rich in fiber, replaces the traditional bun, while adding light cheese and tomatoes instead of ketchup keeps this lower in fat and sugar. Don't be afraid to clean your plate and ask for seconds.

Ingredients
- kosher salt
- 8 oz. whole-wheat elbow macaroni or penne
- 2 tsp. extra-virgin olive oil
- 1/2 cup finely chopped onion
- 1 Tbsp. finely minced garlic
- 1 lb. ground turkey
- 1 tsp. steak seasoning
- 2 (14.5-oz.) cans diced tomatoes
- 2 Tbsp. tomato paste
- 1 Tbsp. yellow mustard
- 1 Tbsp. dill pickle relish
- 6 slices (6 oz.) reduced-fat cheddar
- diced tomatoes
- Freshly ground black pepper
Directions
- Step 1Preheat the oven to 350º.
- Step 2Bring a large pot of salted water to a boil, add the pasta, and cook until al dente. Drain and set aside.
- Step 3Meanwhile, in a 12-inch ovenproof skillet over medium-high heat, heat oil. Add the onion and garlic and sauté, stirring, until fragrant, 1 minute.
- Step 4Add the turkey and steak seasoning. Cook, stirring frequently, until the turkey is browned on the edges (the turkey may not be completely cooked but will finish in the oven). Drain any accumulated juices.
- Step 5Add the canned diced tomatoes, tomato paste, mustard, and relish, then reduce heat to medium and stir until bubbling. Remove from heat and stir in drained pasta. Smooth the top. Cover the top of the casserole with cheese slices, cutting as necessary to fit.
- Step 6Bake until the cheese is melted and the mixture bubbles, 23 to 25 minutes. Garnish with diced tomatoes, sprinkle with salt and pepper, and serve.
