Ingredients

large limes, halved lengthwise
- 1 cup
ginger beer
- 2
envelopes unflavored gelatin
- 3/4 cup
vodka
Chopped fresh mint (about 2 tbsp.), divided
Directions
- Step 1In a liquid measuring cup, juice limes until you get 1/3 cup of liquid. Hollow out those and the remaining limes, then place on a rimmed baking sheet and set aside.
- Step 2In a small saucepan, add lime juice and ginger beer. Sprinkle gelatin over the liquid and let bloom, about 5 minutes. Warm the mixture over low heat, stirring until dissolved. Bring to a low simmer, then stir in vodka and half of the mint. Turn off heat.
- Step 3Let liquid cool slightly, then carefully pour liquid into lime halves and top with remaining mint. Refrigerate until set, about 2 hours.
- Step 4Slice the limes in half again and serve.
