
Classic potato salad is a staple summer potluck side, and for very good reason. Creamy, versatile, and so easy to make, it completes each and every picnic or BBQ spread it's added to. While we can't get enough of the classic, we also love to get creative with this staple side dish. For this recipe, we decided to take the flavors of one of our favorite apps—jalapeño poppers—and add them to this classic potato side. With crispy bacon, hot jalapeños, shredded cheddar cheese, and a simple dressing, this potato salad adds a kick of heat to the classic that we can't get enough of.
Warning: This dish is on the spicy side, but trust us—it's 100% worth it! Not as much of a spice fan? Remove the seeds if you're looking for a milder bite.

Ingredients
- 2/3 cup
mayonnaise
- 1/4 cup
red wine vinegar
- 1 Tbsp.
sliced chives, plus more for serving
- 1 tsp.
garlic powder
Kosher salt
Freshly ground black pepper

Yukon Gold potatoes, boiled, cut into 1" pieces
- 10
slices bacon, cooked, crumbled
- 2
jalapeños, thinly sliced
- 2 cups
shredded cheddar
Directions
- Step 1In a medium bowl, combine mayonnaise, vinegar, chives, and garlic powder; season with salt and pepper and whisk to combine.
- Step 2In a large bowl, combine potatoes, bacon, jalapeños, and cheddar. Add dressing and stir to combine. Top with chives.
