Cauliflower is often used in low-carb recipes, but in my book, zucchini is so the new cauliflower. If you're craving a grilled cheese (the easy, classic comfort food) but want to ditch the bread, then turn to this zucchini recipe. By combining grated zucchini with an egg, Parmesan, scallions, and cornstarch, you'll create patties that, when cooked in a skillet, are the perfect "bread" for your grilled cheese. Add on some shredded cheddar, and you've got a cheesy, veggie-packed bite that will satisfy you just as much as the OG.
The most important thing in this recipe? Get all of the moisture out of your grated zucchini by squeezing it with a clean kitchen towel. Any excess moisture in your zucchini will cause your mixture to be overly wet, and will prevent it from holding together and frying well. Don't rush this step!

Ingredients
- 2 cups
grated zucchini (from about 2 medium)
- 1
large egg
- 2
scallions, thinly sliced
- 1/2 cup
finely grated Parmesan
- 1/4 cup
cornstarch
Kosher salt
Freshly ground black pepper
- 1 Tbsp.
extra-virgin olive oil
- 2 cups
shredded cheddar, divided
Directions
- Step 1Squeeze excess moisture out of zucchini with a clean kitchen towel. In a medium bowl, combine zucchini, egg, scallions, Parmesan, and cornstarch; season with salt and pepper.
- Step 2In large skillet over medium heat, pour oil to coat bottom of skillet. Scoop about 1/4 c. zucchini mixture onto one side of skillet and shape into a small square. Repeat to form another patty on the other side. Cook, turning halfway through, until lightly golden on both sides, about 4 minutes per side. Transfer to paper towels and let drain. Repeat with remaining zucchini mixture. Wipe out skillet.
- Step 3In same skillet over medium heat, arrange 2 zucchini patties side by side. Top patties with about half of cheese, then place 2 more zucchini patties on top to form 2 sandwiches. Cook, turning halfway through, until cheese is melted, about 2 minutes per side.
- Step 4 Transfer to a plate. Repeat with remaining zucchini patties and cheese.
