When spring hits, asparagus is the veggie we incorporate in just about everything. From creamy pastas to grilled sides (gotta take advantage of that warm weather!) to party-worthy bundles, we love finding new ways to celebrate asparagus all spring and summer long. But, when we’re looking for a fancy Easter dinner side, this cheesy baked recipe is our favorite way to prepare it. Topped with garlic, a little cream, and plenty of cheese, even veggie-haters won't be able to resist.
Trimming your asparagus:
The bottom of asparagus spears are pretty tough and nearly impossible to bite through, even when cooked. Trim the bottom inch or so off of each spear, or peel off the thick green outer layer using a vegetable peeler!
The cheesy topping:
To take our roasted asparagus truly over the top, we added garlic, a little heavy cream, Parm, shredded mozzarella, and red pepper flakes for the smallest touch of heat. Not a spice fan? Leave off the red pepper flakes if you prefer. Add on another melty cheese if you prefer, or load it up with your fave seasonings. Just like our roasted asparagus, this cheesy version is fully customizable.
When is my baked asparagus done?
You’re going to want to bake until your asparagus is tender—when you can easily pierce the middle with a fork and the stalk bends over easily when picked up. Our cheesy topping will also be a great indicator for when your side dish is done: once the cheesy turns golden and melty, that’s a good sign.

Ingredients
- 2 lb.
asparagus, stalks trimmed
- 3/4 cup
heavy cream
- 3
cloves garlic, minced
Kosher salt
Freshly ground black pepper
- 1 cup
freshly grated Parmesan
- 1 cup
shredded mozzarella
Red pepper flakes, for garnish (optional)
Directions
- Step 1Preheat oven to 400º. Place asparagus in a 9"-x-13" baking dish and pour over heavy cream and scatter with garlic. Generously season with salt and pepper, then sprinkle with Parmesan, mozzarella and red pepper flakes (if using).
- Step 2Bake until cheese is golden and melty and asparagus is tender, about 25 to 30 minutes, and serve.
