Ingredients
For the cheesecake
- 3 blocks cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1/4 cup sour cream
- 1 tsp. pure vanilla extract
- pinch of kosher salt
- Black, purple, blue and teal food coloring
- Sprinkles, for decorating
For the crust
- 15 graham crackers
- 6 Tbsp. melted butter
- 1 Tbsp. sugar
- pinch of kosher salt
Directions
- Step 1Preheat oven to 325º and grease a 8" or 9" springform pan with cooking spray. Make cheesecake mixture: In a large bowl using a hand mixer, beat cream cheese and sugar until combined. Add eggs and beat until combined, then add sour cream, vanilla, and salt. Divide cheesecake mixture into four bowls.
- Step 2Color each bowl with a different food coloring: black, purple, blue and teal. Stir until color is completely combined.
- Step 3Make crust: Crush graham crackers and stir together with melted butter, sugar, and salt until completely moist.
- Step 4Press graham mixture into prepared pan until packed.
- Step 5Add spoonfuls of cheesecake mixture, alternating colors, until all used up. Run a knife through the colors to swirl.
- Step 6Top all over with sprinkles.
- Step 7Bake until slightly jiggly in the center, about 60 to 70 minutes.
- Step 8Let cool 1 hour in oven, then refrigerate until completely cool, at least 4 hours and up to overnight.
