Belle Cupcakes

Ingredients

  • 1

    box chocolate cake mix, plus ingredients called for on box

  • 3

    (16-oz.) tubs vanilla buttercream frosting

  • Yellow food coloring

  • Orange food coloring

  • 1

    package big marshmallows

  • 4

    tubes yellow gel frosting

  • 1

    box strawberry fruit snacks (such as Welch's)

  • 1

    package rainbow belts (such as Airheads Xtreme Sour Belts)

Directions

    1. Step 1Make the cupcakes: Preheat oven to 350°. Line 2 muffin tins with cupcake liners. Prepare cupcakes according to package’s instructions and divide between liners, filling only halfway. Bake until a toothpick inserted in middle comes out clean, 15 minutes. Let cool completely. 
    2. Step 2Spoon frosting into a large bowl. Add 3 to 4 drops of yellow and 1 to 2 drops of orange, stirring until combined. Add more yellow until you get a shade of yellowish gold to match Belle’s dress. Set aside.
    3. Step 3Line a baking sheet with parchment paper and top with a cooling rack. Take cupcakes out of their wrapper and place cupcakes upside-down onto the rack, about an inch apart from each other. 
    4. Step 4Take a marshmallow, swipe one end with a little frosting, and gently place on the center of each upside-down cupcake, forming the base of Belle’s gown.
    5. Step 5Frost the cupcakes: Working in batches, place some of the frosting into a smaller microwave-safe bowl and microwave in 10 second intervals, stirring each time, until frosting is pourable and thin like paint or a loose cake batter.
    6. Step 6Pour frosting on top of each cupcake, pouring directly over the marshmallow and slowly spiraling outward, until the cupcake is coated entirely. If the cupcake shows through the frosting, give it a second coating. Microwave more frosting as needed. (Tip: If you’re running low on frosting, lift the cooling rack and scrape off any frosting that dripped onto the parchment sheet, microwaving it until it’s pourable again.) Reserve any remaining frosting to help stick the roses onto the dress. 
    7. Step 7Set aside for 10 minutes, so the frosting can set. 
    8. Step 8Use gel frosting to draw Belle’s waistline, tracing the area where the marshmallow and the cupcake touch. Beneath that, draw two rows of ruffles on the cupcake itself. Finish by drawing a v-shape on the top of the marshmallow to resemble Belle’s sweetheart neckline.
    9. Step 9Make the roses: Set each fruit snack on its side, cutting it in half so it’s half as thick. This exposes the gummy side, so it’ll stick directly to the marshmallow. Stick it on, about halfway up the marshmallow, under the neckline. 
    10. Step 10Cut the green stripe off of the rainbow belts, creating one 1/2” strip for the rose’s stem and a 1/4” piece for the leaf. Dab the stem and leaf with a little frosting, if needed, and gently place on the marshmallow, just under the fruit snack “rose.”
