Mean Girls-Inspired Kalteen Bars

These won't burn up all your carbs, but they do taste just like peanut butter cookie dough. No wonder Regina George was hooked. (BTW, Paramount Pictures had nothing to do with this recipe. We're just fans.)

Ingredients
- 2 sticks unsalted butter, melted
- 1 cup powdered sugar
- 1 1/2 cups creamy peanut butter, divided into 1 c and 1/2 c
- 2 1/2 cups graham crackers, crushed
- 1/2 tsp. coarse sea salt, plus more for topping bars
- 2 cups miniature semisweet chocolate chips, divided into 1 1/2 c and 1/2 c
Directions
- Step 1In a large mixing bowl, combine butter, powdered sugar, 1 c peanut butter, graham crackers and salt. Stir until combined. Fold in 1/2 c miniature chocolate chips.
- Step 2Line a 9”x13” pan with parchment paper, spritzing the edges with cooking spray. Pour mixture into pan, spreading in an even layer. Freeze at least 30 minutes, or until firm.
- Step 3In a microwave-safe bowl, combine chocolate chips and peanut butter. Microwave in 20-second intervals, stirring in between, until combined. Pour on top of graham cracker mixture, coating in an even layer. Sprinkle with additional sea salt, if desired. Place in fridge at least 10 minutes to set, then cut into rectangular bars and serve.
