Cauliflower Calzones

Ingredients
- 1 large head cauliflower, cut into florets
- 2 eggs
- 1/4 cup finely grated Parmesan
- 1 clove garlic, minced
- 2 cups shredded mozzarella, divided
- kosher salt
- Freshly ground black pepper
- 1/2 cup pizza sauce
- 1/2 cup pepperoni
- 1 Tbsp. finely sliced basil
Directions
- Step 1Preheat oven to 425º and line a baking sheet with parchment. On a box grater or in a food processor, grate cauliflower and transfer to a large bowl. Microwave on high, 8 minutes. Drain thoroughly with paper towels or a cheesecloth until mixture is dry.
- Step 2Add egg, ½ cup mozzarella, Parmesan and garlic powder to cauliflower bowl and season with salt and pepper. Mix until combined.
- Step 3Form cauliflower into circle shapes on prepared baking sheet and bake until golden, 15 to 20 minutes.
- Step 4Spread pizza sauce over half of each round. Sprinkle with mozzarella and top with pepperoni and basil. Fold the cauliflower in half to cover the cheese and pepperoni. Return to oven and bake until the cheese is melted, about 5 more minutes.
