If you ask us, this beloved recipe deserves all the hype. Cooked in the slow cooker with sweet and spicy pepperoncini, plenty of butter and ranch flavor, this isn't your average roast recipe. The result of slow-cooking your chuck roast for hours with these various delicious ingredients? A tender, flavorful main dish that is so easy to make, you won't believe how good it tastes.
What makes a "Mississippi" roast different?
A Mississippi roast adds some new flavors and additions that differ from your normal roast recipe. Traditionally, it's made by simmering chuck roast in a slow-cooker with butter, a packet of ranch seasoning, pepperoncini and beef broth. The simple ingredients result in an extra tender roast packed with flavor.
How did it originate?
This widely-loved recipe originated from Robin Chapman, a resident of Mississippi — hence the name. While adapting her aunt's pot roast recipe to make it a bit milder, Chapman added her own spin (including the packet of ranch seasoning), and Mississippi Roast — the recipe adored by the internet — was born!
Can I add anything to the slow-cooker?
Sure can! Add some carrots, potatoes or any root vegetables you have to your slow cooker and let them cook with the meat. After soaking in all of those delicious juices, your veggies will be super tender and extra flavorful.
What should I serve it with?
We love to serve this roast with thick slices of bread to scoop it onto, but this roast goes well with a variety of sides. The tender meat and juices beg to be put alongside creamy mashed potatoes, and you can never go wrong with adding some sweet roasted carrots or herby roasted potatoes.

Ingredients
- 1/2 cup
beef broth
- 1/2
large onion, finely chopped
- 1
packet ranch seasoning
- 4 lb.
boneless beef chuck roast
kosher salt
Freshly ground black pepper
- 1 cup
pepperoncini
- 4 Tbsp.
butter
Thick sliced bread, for serving
Directions
- Step 1Combine beef broth, Ranch seasoning, and onion in the bowl of a slow cooker and mix until combined. Add beef chuck roast and season with salt and pepper, then add pepperoncini and butter.
- Step 2Cover and cook on high heat setting for 4 hours or on low for 6 to 8 hours.
- Step 3Remove meat from slow cooker and transfer to a large bowl. Shred meat with two forks and toss beef with juices from the slow cooker.
- Step 4Serve warm on toast.
