Sausage Cauliflower Pizza

Ingredients
- 1 large head of cauliflower or 2 small heads, cut into florets
- 1 1/2 cups freshly grated Parmesan
- 1 large egg
- 1 Tbsp. extra-virgin olive oil
- kosher salt
- Freshly ground black pepper
- 1/4 cup marinara
- 1 tsp. chopped fresh oregano, plus more for garnish
- 8 oz. fresh mozzarella, drained and torn roughly into pieces
- 2 links Kielbasa sausage, thinly sliced
Directions
- Step 1Place pizza stone on middle rack and preheat oven to 500°. Line a sheet pan with parchment paper and set aside.
- Step 2Fill blender halfway with water and add about half of the cauliflower florets. Pulse until cauliflower is size of rice granules. Drain into a colander and repeat with remaining cauliflower. If there are large pieces left pull them out and repeat process. Place cauliflower into a large bowl, cover with a paper towel and microwave for 5 minutes. Spread the cauliflower out on a sheet pan to speed up the cooling time. Squeeze out excess water using a cheesecloth or clean kitchen towel.
- Step 3In a large bowl, combine cauliflower, Parmesan, egg, and oil and season with salt and pepper. Spread out evenly over parchment paper. Place sheet pan directly on pizza stone and bake for 10 minutes.
- Step 4Meanwhile, in a large skillet over medium-high heat, sear sausage on one side for 3 to 4 minutes, then stir fry 1 more minute.
- Step 5Spread marinara over cauliflower crust, leaving a 1-inch border. Sprinkle oregano all over and cover with pieces of mozzarella. Top with sausage and drippings from the pan. Bake 10 minutes and serve immediately with additional oregano.
