Brown Butter Mashed Potatoes

You haven't had mashed potatoes until you've made them with browned butter.

Ingredients
- 2 lb. russet potatoes, peeled and cut into 1-inch dice
- 4 Tbsp. unsalted butter, cut into 1/2-inch pieces
- 3/4 cup whole milk
- kosher salt
- 2 scallions, thinly sliced
Directions
- Step 1In a large pot filled with cool water, add potatoes and bring to a boil. Simmer until potatoes are tender, about 12 minutes.
- Step 2In a small pan over low heat melt the butter. Cook until butter is toasted, 8 to 10 minutes. (Careful not to burn.)
- Step 3Drain potatoes and return to the pot over medium heat, stir for 2 minutes. Add milk, 1 tsp salt, and mash potatoes until creamy. Stir in half of the brown butter.
- Step 4Transfer to a serving dish and top with remaining butter. Garnish with scallions. Serve immediately.
