You haven't had mashed potatoes until you've made them with browned butter.

Ingredients

  • 2 lb. russet potatoes, peeled and cut into 1-inch dice
  • 4 Tbsp. unsalted butter, cut into 1/2-inch pieces
  • 3/4 cup whole milk
  • kosher salt
  • 2 scallions, thinly sliced

Directions

    1. Step 1In a large pot filled with cool water, add potatoes and bring to a boil. Simmer until potatoes are tender, about 12 minutes.
    2. Step 2In a small pan over low heat melt the butter. Cook until butter is toasted, 8 to 10 minutes. (Careful not to burn.)
    3. Step 3Drain potatoes and return to the pot over medium heat, stir for 2 minutes. Add milk, 1 tsp salt, and mash potatoes until creamy. Stir in half of the brown butter.
    4. Step 4Transfer to a serving dish and top with remaining butter. Garnish with scallions. Serve immediately.
