1. Step 1In a large bowl, beat cream cheese and sugar together until smooth and fluffy, 2 minutes. Stir in crushed shortbread cookies until completely combined. Using a small cookie scoop, form balls of the mixture. Refrigerate until firm, 30 minutes.
2. Step 2In a small bowl, stir together caramel and toasted coconut. Dip each ball into mixture until completely coated.
3. Step 3Refrigerate 30 minutes more to let caramel set.
4. Step 4Drizzle with melted chocolate.
