Ingredients
- 1 cup marinara sauce
- 2 Eggs, beaten
- 1 1/2 cups shredded mozzarella cheese, divided
- 1/4 cup freshly grated Parmesan cheese
- 1/2 cup mini pepperoni, divided
- 1/2 tsp. dried oregano
- 1/2 tsp. garlic powder
- kosher salt
- Freshly ground black pepper
- 2 (16 oz.) bags Green Giant Cauliflower Veggie Tots
Directions
- Step 1Preheat the oven to 425 degrees F. Grease a 12-cup muffin tin.
- Step 2 In a large bowl, combine marinara sauce, eggs, 1 cup mozzarella, Parmesan, 1/4 cup pepperoni, oregano, and garlic powder. Season with salt and pepper.
- Step 3Toss in tots and mix until evenly coated. Pack into muffin cups, then sprinkle with remaining mozzarella and pepperoni.
- Step 4Bake until muffins are crispy and cheese is melty, 20 to 22 minutes. Cool slightly before removing.
