Step 3Toss apple slices in pancake batter until they are completely coated.
Step 4Meanwhile, heat a large nonstick skillet over medium heat and grease with cooking spray. Working in batches, adda few dredged apple slices and cook undisturbed until bubbles form on pancake batter, 2 minutes.Flip and cook2 minutes more.Repeat with remaining apple slices.
Step 5Transfer apple pancakes to a bowl of cinnamon sugar and toss while warm. Serve with maple syrup.
