Ingredients
For the Pop-Tart Streusel
- 1/3 cup granulated sugar
- 1/3 cup brown sugar
- 1 tsp. cinnamon
- 1/4 tsp. kosher salt
- 1 stick butter, melted
- 1 1/2 cups cake flour
- 1 tsp. espresso powder
- 2 Pop-Tarts, crumbled
For the Cake
- 1 1/4 cups cake flour
- 1/2 cup granulated sugar
- 1/2 tsp. baking soda
- 1 Tbsp. espresso powder
- 1/4 tsp. kosher salt
- 6 Tbsp. unsalted butter, cut into cubes and softened
- 1 large egg
- 1 large egg yolk
- 1 tsp. pure vanilla extract
- 1/3 cup buttermilk
Directions
- Step 1Preheat oven to 325°. Spray the bottom and sides of an 8"-x-8" baking pan with cooking spray.
- Step 2Make the streusel topping: Whisk sugars, cinnamon, salt, and butter. Stir in the flour and espresso powder until a crumbly dough forms. Fold in half of the Pop Tart pieces and set aside.
- Step 3Make the cake: In a large mixing bowl, combine the flour, sugar, baking soda, espresso powder, and salt. Beat in butter, one piece at a time, until the dough forms into pea-sized crumbles. Add the egg, egg yolk, vanilla, and buttermilk, beating for another minute or two. Pour batter into greased baking dish.
- Step 4Break the crumb topping into small, pea-sized bits and sprinkle it on top of the batter, then top with remaining Pop-Tart pieces. Bake until a toothpick inserted into the center comes out clean, 38 to 40 minutes. Let cool for 20 minutes before serving.
