
Friendsgiving nachos are the ultimate way to enjoy Thanksgiving (with minimal effort). It’s all the elements of Thanksgiving—turkey, mashed potatoes, stuffing, gravy, and cranberry sauce—PLUS cheese served on top of a bed of crunchy nacho chips. Gather your friends and family around this Thanksgiving tray for a Friendsgiving meal or any time you want to switch up the classic party app.
We created this recipe with Thanksgiving leftovers in mind, but also know that we often crave Thanksgiving without leftovers on hand, so here is a great strategy to prepare the nachos if you don’t want to roast a whole turkey and make all of the sides. Store-bought mashed potatoes, gravy, and stuffing or instant stuffing like Stouffer's (you’ll need about half a box) are good substitutes for the sides. For the turkey, you can use shredded rotisserie chicken, and as you can imagine, it’s equally delicious in its own way. These nachos are all about using up what you have on hand—get creative with them.

Ingredients

large bag tortilla chips
- 2 1/2 cups
leftover or store-bought mashed potatoes, warmed
- 2 cups
shredded leftover turkey or rotisserie chicken
- 2 cups
shredded sharp cheddar
- 1 cup
shredded fontina, white cheddar, or gouda
- 1 1/2 cups
leftover stuffing or 1/2 (6-oz.) box stuffing, prepared according to package directions

Brussels sprouts, shredded with a knife (about 1 c.)

(14-oz. can) whole cranberry sauce
- 1
fresh jalapeño, stemmed, seeded, thinly sliced
- 1/4 cup
packed fresh cilantro leaves, chopped
- 1/4 cup
leftover or store-bought gravy
- 1
scallion, thinly sliced
- 1/3 cup
pickled jalapeños
Directions
- Step 1Preheat oven to 425º. On a large baking sheet, arrange chips in a single layer. Dollop small spoonfuls of mashed potatoes over chips; spread in an even layer. Top with turkey, cheddar, fontina, stuffing, and Brussels sprouts.
- Step 2Bake nachos until toasted and cheese is melted, about 10 minutes.
- Step 3Meanwhile, in a medium bowl, combine cranberry sauce, fresh jalapeño, and cilantro.
- Step 4Drizzle nachos with gravy. Drizzle with some cranberry sauce mixture. Sprinkle with scallions and pickled jalapeños. Serve with remaining cranberry sauce mixture alongside.
