Butter-Roasted Cod with Couscous

Ingredients
- 1 package plain couscous
- 4 cod fillets (6- to 8-oz. each)
- kosher salt
- Freshly ground black pepper
- Extra-virgin olive oil, for drizzling
- 5 Tbsp. unsalted butter
- 1 clove garlic, grated
- 1/2 cup thinly sliced basil, plus extra sprigs for garnish
- 2 Tbsp. chicken stock
Directions
- Step 1Cook couscous according to package instructions. Fluff with a fork and keep warm.
- Step 2Preheat oven to 450°. Line sheet pan with parchment paper and add cod fillets. Season with salt and pepper and drizzle with olive oil. Bake until fish is opaque and cooked through, about 15 minutes.
- Step 3Meanwhile, in a saucepan over medium heat, whisk together butter and garlic until melted and fragrant. When butter begins to foam, lightly fry basil for 20 to 30 seconds; be careful not to burn. Stir in chicken stock and warm through.
- Step 4Serve cod with basil butter sauce and couscous. Garnish with sprig of basil.
