Bacon Mini Meatloaves

Ingredients
- 1 Tbsp. extra-virgin olive oil
- 1 Onion, finely chopped
- 2 carrots, finely minced
- 1 celery stalk, finely minced
- 1 clove garlic, minced
- 1 Tbsp. tomato paste
- 2 Tbsp. Worcestershire sauce
- 2 lb. ground beef
- 1/2 cup bread crumbs
- 2 large eggs, beaten
- kosher salt
- Freshly ground black pepper
- 6 slices thin-cut bacon
- 1/3 cup ketchup
- 2 tsp. brown sugar
- 1 Tbsp. apple cider vinegar
Directions
- Step 1Preheat oven to 375°.
- Step 2In a large skillet over medium heat, heat oil. Sauté onion, carrots, and celery until beginning to soften. Stir in garlic and cook until fragrant, about 30 seconds. Turn off heat, then add tomato paste and Worcestershire sauce. Stir until evenly combined.
- Step 3In a large bowl, combine ground beef, bread crumbs, eggs, and cooked vegetables. Season with salt and pepper.
- Step 4Using your hands, shape 6 patties, about 4” wide, to make mini meatloaves. Place on baking sheet, then wrap each patty with a strip of bacon.
- Step 5Whisk together ketchup, brown sugar, and apple cider vinegar. Spoon the ketchup glaze onto each mini meatloaf.
- Step 6Bake for 30 minutes, until the bacon and meat are cooked through. (The bacon won’t get super-crispy, but it will still be delish!)
- Step 7Serve warm, preferably alongside mashed potatoes.
