Pink Meringue

Ingredients
- 2/3 cup powdered sugar
- 1/3 cup granulated sugar
- 4 egg whites
- 1/8 tsp. cream of tartar
- 1/8 tsp. salt
- 1 tsp. raspberry extract
- 5 drops pink food coloring
Directions
- Step 1Preheat the oven to 250 degrees F.
- Step 2Mix the sugars and set aside. In the bowl of an electric mixer, add egg whites. Beat until foamy, then add cream of tartar and salt.
- Step 3Start adding sugar to the mixture slowly, 1 tablespoon at a time. Add raspberry extract and beat to incorporate. After this, the egg whites should appear stiff and glossy.
- Step 4Transfer mixture to a piping bag fitted with a large star tip. Line 2 baking sheets with parchment paper. Pipe meringues into about 24 ribbon shapes.
- Step 5Bake for 1 hour exactly, then turn off the oven and let the meringues sit for 3 hours, and up to 8. Don't open the oven door until then!
