Ingredients
12 slices of bacon, halved
- 2 cups
pancake mix, plus ingredients called for on box
- 3 Tbsp.
butter, divided
Maple syrup, for serving
Directions
- Step 1Heat a large nonstick skillet over medium heat, cook bacon until crispy, 8 minutes. Drain on a paper towel- lined plate. Discard fat and wipe skillet clean.
- Step 2Meanwhile, prepare pancake batter according to box instructions.
- Step 3Add 1 tablespoon butter to same skillet over medium heat and melt.
- Step 4Using tongs, coat each bacon half in pancake batter. Working in batches, add battered bacon to skillet and cook until bubbles begin to form on surface of batter, about 2 minutes. Flip and cook 2 minutes more. Repeat until all bacon dippers are cooked, adding more butter to skillet as needed between batches.
- Step 5Serve bacon dippers with maple syrup.
You can turn ANYTHING into pancake dippers; we love battering breakfast sausage, apple slices, and bananas.
