Here at Delish, we're big fans of poke cakes. They're quick, easy, and the perfect solution when we need a crowd-pleasing cake without the effort. If you're a red velvet fan or are looking for a super simple Valentine's Day treat, look no further than this red velvet version. All you need are a handful ingredients and a few hours (no stress—the majority of this is hands-off chill time), and you'll have a rich and decadent dessert on your hands to wow any red velvet lover.
We prefer to use a box mix in this recipe (and in most of our poke cake recipes) for ease, but if you're really looking to take this dessert over the top, you can use our classic red velvet cake recipe instead.

Ingredients
- 6 Tbsp.
unsalted butter, softened, plus more for pan
All-purpose flour, for pan
- 1
(15.25-oz.) box red velvet cake mix, plus ingredients called for on box
- 2
(15-oz.) cans sweetened condensed milk
- 12 oz.
cream cheese, room temperature
- 2 1/4 cups
confectioners' sugar
- 1 1/2 tsp.
pure vanilla extract
Directions
- Step 1Preheat oven to 350°. Grease a 13" x 9" pan with butter, then dust with flour, tapping out excess. Prepare cake mix according to box instructions. Pour batter into prepared dish.
- Step 2Bake cake until a tester inserted into the center comes out clean, about 25 minutes. Let cool in pan about 20 minutes.
- Step 3Poke large holes across entire surface of cake with the handle of a wooden spoon. Pour milk over cake and spread with a spatula to make sure it pours into holes. Cover and refrigerate until cold, about 2 hours.
- Step 4In a large bowl, using a handheld mixer on medium-high speed, beat cream cheese and 6 tablespoons butter until light and fluffy. Add confectioners’ sugar and vanilla and continue to beat until combined.
- Step 5Spread frosting all over top of cake.
