Ingredients

  • 2 Tbsp. canola oil
  • 2 medium shallots, thinly sliced
  • 1/2 tsp. curry powder
  • 1/2 tsp. ground cumin
  • 3 cloves garlic, finely chopped
  • 2/3 cup ketchup
  • 1/2 tsp. cayenne (ground red) pepper
  • 1 lb. (26- to 30-ct.) shelled, deveined shrimp
  • Cooked basmati rice or toasted naan, for serving
  • Fresh cilantro leaves, for garnish

Directions

    1. Step 1In 12" nonstick skillet, heat oil on medium. Add shallots, curry powder, cumin, and 1⁄2 teaspoon black pepper. Cook 3 minutes, stirring occasionally. Add garlic; cook 1 minute, stirring. Add ketchup, cayenne, and 1⁄4 teaspoon salt. Cook 2 minutes or until thickened, stirring frequently.
    2. Step 2To skillet, add shrimp. Cook 3 minutes or until shrimp are just opaque, stirring occasionally. Serve with rice or naan and garnish with cilantro.
