Look, a potato is a potato no matter how you cut it. Deep fried or roasted in the oven it’s gonna be great. Our potato wedges are covered in cheese AND dipped in caesar dressing. How bad could that actually be? Our potato wedges are made with russets. The potatoes are sliced into wedges and seasoned with salt, pepper, Italian seasoning, and garlic powder. All of those are key to maximizing baked potato potential.
Best Potato to use for baking
There are hundreds of different types of potatoes and we love them all. But to find the easiest solution for wedge making russets are the way to go. A potato with higher starch content is best for french fries, baked potato, or wedges. Idaho and Yukon's fall in that category as well. And, if you wanted to try sweet potatoes or Japanese purple potatoes you totally can!
How do I get crispy potatoes in the oven?
You definitely want a potato with higher starch content as the sugars will caramelize and make for one delicious wedge. But, you also want the oven temperature to be higher than the 350 or 375 degrees you’re used to seeing everywhere in baking or roasting.
I don’t like caesar dressing.
We love it but if you don’t there are more options where that came from. Ingredients

large russet potatoes
- 1/4 cup
extra-virgin olive oil
- 1 Tbsp.
garlic powder
- 1 Tbsp.
Italian seasoning
kosher salt
Freshly ground black pepper
- 1/2 cup
freshly grated Parmesan
Chopped fresh parsley, for garnish
Caesar dressing, for dipping
Directions
- Step 1Preheat oven to 400°.
- Step 2Cut potatoes into wedges. Add to baking sheet and top with olive oil, garlic powder and Italian seasoning and season with salt and pepper. Toss until fully coated, then flip skin side down.
- Step 3Top with Parmesan and bake until deeply golden and crispy, 25 to 27 minutes.
- Step 4Garnish with parsley and serve with Caesar dressing for dipping.
