Honey Chipotle Tacos

Make these sweet and spicy chicken tacos for your next taco night.

Ingredients
- 3 Chicken Breasts, cubed
- 3 chipotle peppers in adobo sauce, chopped
- 2 Tbsp. adobo sauce (from the chipotle pepper can)
- 2 Tbsp. honey
- 1/4 cup olive oil
- 1/2 tsp. garlic powder
- 1/4 tsp. chili powder
- 1 tsp. salt
- 1 Tbsp. vegetable oil
- 1 lime, sliced into wedges
- 8 hard taco shells
- 2 scallions, thinly sliced
- Sour cream, for serving
Directions
- Step 1Combine peppers, adobo sauce, honey, olive oil, and spices in a medium bowl. Whisk to combine, then add chicken. Cover with plastic wrap and marinate in refrigerator for at least 15 minutes and up to 2 hours.
- Step 2Heat vegetable oil in a large skillet over medium-high heat. Season marinated chicken with salt and pepper to taste. When the oil is hot, sauté chicken until browned and cooked through, about 8 to 10 minutes.
- Step 3Serve in taco shells with scallions, sour cream and lime juice.
