Ingredients
- 8 frozen waffles
- 8 slices bacon
- 8 large eggs, whisked
- 1 cup shredded white Cheddar
- kosher salt
- Freshly ground black pepper
- Warm maple syrup, for drizzling
Directions
- Step 1Preheat oven to 350°. Microwave waffles for 25 seconds (they should be pliable but not fully cooked).
- Step 2Place waffles between slots in a flipped-over muffin tin and bake until they hold their shape, 5 minutes.
- Step 3Meanwhile, in a large skillet over medium heat, cook bacon until crispy. Transfer to a paper towel-lined plate to drain. Once cool, break in half. Drain half the fat in skillet.
- Step 4Add eggs to skillet and cook, stirring occasionally, until mostly scrambled. Add cheese and stir until melted, then remove from heat and season with salt and pepper.
- Step 5Line each waffle with 2 halved bacon strips and top with eggs.
- Step 6Drizzle with maple syrup.
