Fruity Pebbles Ice Cream Sandwiches

Ice cream sandwiches only sound fussy—these Fruity Pebble ones are as simple as making a batch of Krispie Treats, stamping out rounds, and sandwiching with a scoop of vanilla ice cream. Want to change it up? This method works with several different kinds of cereal—if they work in a Krispie Treat, they'll work here.

Ingredients
- 3 Tbsp.
butter, plus more for greasing
- 10 oz.
bag mini marshmallows
- 6 cups
Fruity Pebbles
- 4
large scoops vanilla ice cream
Directions
- Step 1Grease a medium sheet pan with butter. In a large saucepan over low heat, melt butter. Add marshmallows and stir until completely melted and smooth. Remove from heat and quickly stir in cereal until well coated.
- Step 2Using wax paper or spatula, press mixture into sheet pan until about 1/2" thick. Let cool at least 20 minutes.
- Step 3Using a cookie or biscuit cutter, punch out 8 rounds. Place 1 big scoop of ice cream on four rounds and sandwich with remaining rounds.
- Step 4Freeze until ready to serve.
