Cooking fish in these foil packs is a total cinch. Using foil over the grill means your fish stays in one tender piece throughout the cooking process, until it meets your fork. With a simple drizzle of honey, lime, and corn, you have all the sweet-tart freshness of summer in one neat little package.
Take note that if your fish fillets run larger, it might take a bit longer on the grill to cook through completely. If you own a meat thermometer, aim to hit 145° internal temperature before it comes off the grill!

Ingredients

(6-oz.) fillets tilapia
- 2 Tbsp.
honey
- 4
limes, thinly sliced
- 2
ears corn, shucked
- 2 Tbsp.
fresh cilantro leaves
- 1/4 cup
extra-virgin olive oil
Kosher salt
Freshly ground black pepper
Directions
- Step 1Heat grill to high. Cut 4 sheets of foil about 12" long.
- Step 2Top each piece of foil with a piece of tilapia. Brush tilapia with honey and top with lime, corn, and cilantro. Drizzle with oil and season with salt and pepper.
- Step 3Fold each foil pack crosswise over to completely cover the food mixture. Roll top and bottom edges to seal.
- Step 4Grill until tilapia is cooked through and corn is tender, about 15 minutes.
