Sriracha Meatloaf

Ingredients
- 1 1/4 cups ketchup
- 1/4 cup sriracha
- 1/2 cup chopped onion
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 3/4 cup chopped fresh parsley
- 2 cloves garlic, roughly chopped
- kosher salt
- Freshly ground black pepper
- 3/4 cup panko bread crumbs
- 1 large egg, beaten
- 1 lb. ground beef
- 1 lb. ground pork
- 6 pieces greenleaf lettuce
- 1 large beefsteak tomato, sliced
- 1 large red onion, sliced
- 8 slices crusty country bread
Directions
- Step 1Preheat oven to 375° and line a sheet pan with parchment paper. In a small bowl, mix together ketchup and Sriracha and set aside.
- Step 2In the bowl of a food processor add onion, carrot, celery, parsley and garlic. Pulse until combined, then transfer to a large mixing bowl. Add salt, pepper, panko and egg and mix together with a spoon. Add meat and 1/2 cup Sriracha-ketchup sauce, then mix by hand until just incorporated.
- Step 3Divide meatloaf into 4 equal parts. Shape each into a rectangle about 1" high and place on parchment paper. Spread 1 tablespoon sauce on each piece using back of a spoon or a brush, then bake for 20 minutes.
- Step 4Assemble sandwiches by layering lettuce, tomato, onion and meatloaf between 2 pieces of bread. Serve with remaining sauce.
