Burrata, Sausage and Broccoli Rabe Toast

Ingredients
- 1 lb. sweet Italian sausage, casing removed
- extra-virgin olive oil
- 1 Large garlic clove, minced
- 1 bunch broccoli rabe, cut into 2" pieces
- kosher salt
- Freshly ground black pepper
- 8 pieces sourdough bread or rustic country bread
- oz. burrata cheese, room temperature
- Flaky sea salt, such as Maldon
- 1 Tbsp. crushed red pepper flakes
- Fresh basil, for garnish
Directions
- Step 1Preheat oven 400 degrees F. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and sausage. Break apart sausage with a wooden spoon as it browns. Cook about 2 minutes.
- Step 2Add garlic and broccoli rabe to skillet; season with salt and pepper. Cook until broccoli is tender, 5 minutes. Keep warm until ready for assembly.
- Step 3Place bread in a single layer on a sheet pan fitted with a rack. Drizzle with olive oil and toast in oven until golden brown, about 5 minutes.
- Step 4Assemble toast; spread burrata on top of toast, then top with sausage and broccoli rabe. Drizzle with olive oil; season with sea salt and red pepper flakes. Garnish with fresh basil.
