Bacon Cheeseburgers with Sweet Potato Chips

Ingredients
- 3 Tbsp. extra-virgin olive oil, plus more for drizzling
- 4 large sweet potatoes, peeled and sliced
- kosher salt
- Freshly ground black pepper
- 8 strips bacon
- 1 1/3 lb. 80% lean ground beef, formed into 4 patties (1/3 lb. each)
- 4 slices American cheese
- 4 sesame hamburger buns
- Greenleaf lettuce
- 4 small tomatoes or 1 large beefsteak tomato, sliced
- 1 red onion, sliced
- Ketchup, for serving
Directions
- Step 1Preheat oven to 450°. Drizzle rimmed baking sheet with olive oil and place in oven for 5 minutes. In a mixing bowl, mix potatoes with 2 tablespoons olive oil and season with salt and pepper. Arrange potatoes in a even layer on heated baking sheet. Bake 23 to 25 minutes, then season with salt immediately.
- Step 2Place 2 paper towels on a microwave-safe plate. Spread out bacon in an even layer and cover with 2 more paper towels. Microwave on high for 3 to 3 1/2 minutes.
- Step 3In a large cast iron skillet over high heat, add remaining tablespoon oil. Place burgers in pan and cook 2 minutes per side, then add cheese and cover until melty. Transfer to a paper towel-lined plate to rest.
- Step 4Assemble burger on sesame bun with lettuce, tomato, and onion. Serve with ketchup and a side of sweet potato chips.
