Chicken Ranch Casserole

Shredded chicken, bacon and cheese combine in this bubbly biscuit bake.

Ingredients
- 2 rolls biscuit dough
- 2 Tbsp. melted butter
- 1 packet ranch seasoning mix
- 1 rotisserie chicken (or 3 boiled chicken breasts)
- 1/3 cup ranch dressing
- 1/3 cup shredded Mexican cheese
- 1/3 cup fresh salsa, juices drained
- 4 strips bacon, cooked and crumbled
- Diced green onion, for garnish
Directions
- Step 1Preheat oven to 375°. Peel apart biscuits and use a knife to cut them into quarters.
- Step 2Place in a large resealable bag and top with butter and ranch seasoning mix. Seal bag and toss until biscuits are coated; pour into a greased 3-quart casserole dish.
- Step 3Use two forks to shred chicken meat into bite-size pieces. In a mixing bowl, toss chicken and ranch dressing; pour on top of biscuit mixture. Top with cheese, salsa, bacon and green onions.
- Step 4Bake until biscuits are lightly golden and cheese has melted, 20 to 22 minutes. Serve.
