Loaded Skillet Potato Skins

Ingredients
- 1 bag baby Yukon or red potatoes (3 lbs.)
- 1/2 cup shredded sharp Cheddar
- 3 strips cooked bacon, crumbled
- 1 Tbsp. Sliced green onions
Directions
- Step 1Poke potatoes with fork, then place in a large saucepan, covering completely with water. Boil until tender, about 20 minutes.
- Step 2Arrange potatoes on a cast-iron skillet or baking sheet and use a potato masher to smash each one. Top with cheddar, bacon and green onions and broil in the oven until cheese is melty, about 5 minutes.
