Cheesy Bacon-Asparagus Dip

Whether or not you stuff this in a bunny-shaped bread bowl, this dip will wow your guests.

Ingredients

  • 1 bunch asparagus, trimmed and roughly chopped
  • 1 Tbsp. extra-virgin olive oil
  • kosher salt
  • Freshly ground black pepper
  • 4 slices cooked bacon, chopped
  • 2 oz. softened cream cheese (1/4 block)
  • 1 cup shredded sharp white cheddar
  • 1/2 cup shredded Gruyere
  • 1/2 cup sour cream
  • 1/4 cup freshly chopped chives
  • Freshly ground black pepper

Directions

    1. Step 1Heat broiler. On a baking sheet, toss asparagus with olive oil and season with salt and pepper. Broil until tender and slightly charred, 5 to 7 minutes. Reduce heat to 375°.
    2. Step 2Transfer asparagus to a large bowl. Add bacon, cheeses, sour cream and chives and season with pepper. Stir until combined.
    3. Step 3Transfer dip to a bread bowl or baking dish and bake until cheese is bubbly and dip warmed through, 18 to 20 minutes. Serve with bread, crackers, or vegetables.
