Ingredients

  • 1 cup

    (2 sticks) butter, softened

  • 1 cup

    packed brown sugar

  • 1/2 cup

    granulated sugar

  • 1 1/2 tsp.

    pure vanilla extract

  • 2

    large eggs, room temperature

  • 2 1/2 cups

    all-purpose flour

  • 1 1/2 tsp.

    baking soda

  • 1 tsp.

    kosher salt

  • 1/4 tsp.

    ground cinnamon

  • 1/3 cup

    quick-cooking oats

  • 2 1/2 cups

    semisweet chocolate chips

  • 3/4 cup

    chopped walnuts

Directions

    1. Step 1Preheat oven to 350°. Line two baking sheets with parchment. In a large mixing bowl using a hand mixer, cream butter, sugars, and vanilla until light and fluffy, about 5 minutes. Slowly mix in eggs, beating until mixture is smooth.
    2. Step 2In a separate bowl, combine flour, baking soda, salt, and cinnamon. Gradually stir dries into the butter-sugar mixture, then fold in oats, chocolate chips, and walnuts.
    3. Step 3Use a large cookie scoop to place balls of dough about 2" apart on prepared baking sheets. Bake until edges are lightly golden but center of cookie is still a bit soft, 17 to 19 minutes.
