Peeps S'mores Brownies

Ingredients

For the Graham Cracker Crust

  • 1 cup graham cracker crumbs
  • 4 Tbsp. unsalted butter, melted

For the Brownies

  • 10 Tbsp. unsalted butter
  • 1 1/4 cups granulated sugar
  • 3/4 cup plus 2 tablespoons unsweetened cocoa powder
  • 1/4 tsp. kosher salt
  • 2 eggs
  • 1 tsp. pure vanilla extract
  • 1 cup chocolate chips
  • 1/2 cup all-purpose flour
  • 1 cup marshmallow Fluff
  • 18 Peeps

Directions

    1. Step 1Preheat oven to 325". Line an 8-x-8" baking pan with aluminum foil or parchment, leaving overhang on the sides. Spray with nonstick cooking spray and set aside.
    2. Step 2Make the crust: In a bowl, combine graham cracker crumbs and melted butter. Press into prepared pan and set aside.
    3. Step 3Make the brownies: In a small saucepan over low heat, melt butter, sugar, cocoa powder, and salt, stirring until smooth. (Batter will be very granular.)
    4. Step 4Add eggs and vanilla and stir vigorously until batter is thick, shiny, and well blended. Add flour and stir until you cannot see it any longer. Fold in chocolate chips.
    5. Step 5Pour half the batter into prepared pan and spread evenly.
    6. Step 6Dollop half the marshmallow fluff all over the batter and swirl slightly with a knife. Spread remaining batter carefully over marshmallow fluff. Repeat with remaining marshmallow on top of brownie batter. With a knife, carefully swirl marshmallow fluff into batter.
    7. Step 7Bake until a toothpick in the center emerges slightly moist with batter, about 25 minutes. Top with Peeps and bake until Peeps are puffed up and melted together, 3 to 5 minutes more.
    8. Step 8Cool brownies completely before cutting into 16 equal squares with a very sharp knife.
