Peanut Butter Granola Blondie Bar

Ingredients
- 2 Eggs, beaten
- 1 cup unsweetened natural peanut butter, room temperature
- 3/4 cup packed brown sugar
- 1/4 cup Butted, melted
- 2 tsp. vanilla
- 1/4 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. fine sea salt
- 1/2 cup plus 2 tablespoons Cascadian Farm™ Farm Stand Harvest organic honey, almond and chia granola
- 1/2 cup dark chocolate chips
Directions
- Step 1Heat oven to 325 degrees F. Line bottom of an 8" square pan with parchment paper.
- Step 2In a large bowl, mix together eggs, peanut butter, brown sugar, melted butter, and vanilla. Add flour, baking soda, and salt until blended. Stir in 1/2 cup granola and 1/4 cup chocolate chips and spread evenly in pan.
- Step 3Bake until center is set, 33 to 38 minutes.
- Step 4In a 1-quart saucepan, melt remaining 1/4 cup chocolate chips over low heat, stirring frequently. Drizzle chocolate over bars and sprinkle with remaining 2 tablespoons granola. Let cool 2 hours before cutting into bars.
