Cheesy Turkey Meatball Skillet

Simmering in tomato sauce (use it straight from the jar as a shortcut), these cheesy, super flavorful ground turkey meatballs are comfort in a skillet.

Ingredients
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- 4 cloves garlic, minced and divided
- 2 Tbsp. freshly chopped rosemary
- 1 28-oz. can crushed tomatoes
- kosher salt
- Freshly ground black pepper
- 1 lb. ground turkey
- 1 cup bread crumbs
- 1 large egg
- 3 Tbsp. freshly chopped parsley, plus more for garnish
- 1 cup shredded mozzarella
Directions
- Step 1Preheat oven to 375°. Make sauce: In a large pot over low heat, heat 1/4 cup oil. Add half the garlic and all the rosemary and stir, making sure it doesn't burn, until fragrant, 1 minute. Add tomatoes and season with salt and pepper. Let simmer while you make meatballs.
- Step 2Meanwhile, in a large bowl, combine turkey, bread crumbs, egg, remaining garlic, and parsley and season with salt and pepper. Roll mixture into meatballs and set aside.
- Step 3In a large skillet over medium-high heat, heat remaining 2 tablespoons oil. Add meatballs and brown, moving occasionally to ensure they don't stick, about 5 minutes.
- Step 4Ladle sauce into skillet and over meatballs. Top with cheese and bake until meatballs are cooked through, 10 minutes more.
- Step 5Garnish with parsley and serve.
