Ingredients
For the Cookies
- 1 box sugar cookie mix, plus ingredients called for on box
For the Whipped Cream
- 1 1/2 Tbsp. sugar
- 1 cup heavy whipping cream
For the Strawberry Topping
- 1 cup quartered strawberries
- 1 tsp. sugar
Directions
- Step 1Make the cookies: Bake sugar cookies according to the package's instructions. Roll into 1 1/2" balls and place about an inch apart on a parchment-lined baking sheet. Do not flatten the dough balls; you want them to be light and fluffy, like shortcake.
- Step 2Make the whipped cream: Combine sugar and whipping cream in a large mixing bowl. Use an electric mixer to whip to stiff peaks, 2 to 3 minutes. (You can make this up to 10 hours ahead of time.)
- Step 3Make the strawberries: Combine strawberries and sugar in a small bowl, stirring to coat. Let sit for 20 minutes, until juices form. Serve with whipped cream and fresh cookies, letting people assemble their own short-cookie treats.
