Start the new year off with a big bowl of this spicy, meaty hoppin' John.

Ingredients

  • 1 cup long-grain white rice
  • 2 Tbsp. olive oil
  • 6 oz. andouille sausage, sliced into half-moons
  • 1 medium onion, chopped
  • 1 medium green pepper, cut into 1/4-in. pieces
  • 1 large clove garlic, finely chopped
  • 1 jalapeno, thinly sliced
  • 2 15-oz. cans black-eyed peas
  • 3 cups baby spinach

Directions

    1. Step 1Cook the rice according to package directions.
    2. Step 2Meanwhile, heat 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, tossing once, until browned, 2 to 3 minutes. Transfer to a bowl.
    3. Step 3Return the pan to medium heat and heat the remaining tablespoon oil. Add the onion and cook, covered, for 4 minutes. Add the pepper and cook, stirring occasionally, until the vegetables are tender, 5 to 6 minutes.
    4. Step 4Stir in the garlic and jalapeno and cook for 1 minute. Add the beans and 1/2 cup water and cook until heated through.
    5. Step 5Return the sausage to the skillet along with the spinach and cook until beginning to wilt, about 2 minutes. Serve over the rice.
