Egg-in-a-Nest Tater Tot Cups Recipe

Ingredients
- Butter, for greasing
- 1 bag Tater tots
- 1/2 bag shredded cheese (like pepper jack or sharp cheddar)
- 12 large eggs
- 1 bottle sriracha (optional)
Directions
- Step 1Preheat the oven to 375° and butter the bottom and sides of each cup of a muffin tin.
- Step 2Let the tater tots thaw for at least 20 minutes before starting, so that they're easier to mold. Place 3 to 4 tots in each cup of a muffin tin, using your fingers or a shot glass to smash the tots and mold them into a cup-like shape.
- Step 3Sprinkle shredded cheese onto each "cup" of tater tots. Crack an egg on top of each one, then place into the oven for 20 to 22 minutes, or until the whites are no longer translucent and the yolk has set.
- Step 4Drizzle with Sriracha or other hot sauce before serving.
