Caramelized Onion Tart with Goat Cheese and Thyme

Ingredients

14-oz. sheet frozen puff pastry, thawed
- 1/4 cup
Country Crock Original
- 2
large onions, thinly sliced into half moons
- 2 Tbsp.
brown sugar
kosher salt
Freshly ground black pepper
- 8 oz.
goat cheese, crumbled
- 10
fresh thyme sprigs
Directions
- Step 1Preheat the oven to 400° and line a baking sheet with parchment paper. On a floured surface, roll out puff pastry to a 9"-x-13" rectangle, then transfer puff pastry to prepared baking sheet and prick all over with a fork.
- Step 2Bake until golden brown, 15 minutes, then let cool slightly.
- Step 3Meanwhile, in a large pot, warm Country Crock Original over medium-high heat. Add onions and cook until golden, 10 minutes, then add brown sugar and cook 5 minutes more. Season with salt and pepper.
- Step 4Spread caramelized onions over puff pastry, leaving a 1/2" board around the edges. Sprinkle with goat cheese and scatter thyme sprigs on top.
- Step 5Bake until puff pastry is golden brown and crisp and cheese is warm and melty, about 10 minutes. Let cool slightly, then cut into squares and serve.
