This classic gets a makeover from a quick toss in the oven and crunchy panko breadcrumbs.

Ingredients
- 2/3 cup flour
- 1 lg. egg
- 2/3 cup buttermilk
- 2 cups panko breadcrumbs
- 6 Tbsp. canola oil, divided
- kosher salt
- Black pepper
- 1 med. sweet onion (sliced 1/4 in. thick, rings separated)
Directions
- Step 1Place flour in a dish. Whisk together egg and buttermilk in a second dish. Toss together panko breadcrumbs and 3 tablespoons canola oil in a third dish. Season with salt and pepper.
- Step 2Dip sweet onion in flour, then in egg mixture, then in breadcrumb mixture.
- Step 3Brush 2 large baking sheets with 3 tablespoons canola oil. Heat in 450 degrees F oven for 5 minutes. Arrange onion rings on hot pans. Bake, turning once, until golden brown, 16 to 18 minutes.
