Foil Pack Cheese Quesadilla with Fresh Salsa

Ingredients
- 1 tomato, diced
- 1/4 red onion, chopped
- Small handful cilantro, chopped
- 1/2 lime
- 1 large tortilla
- 1/2 cup shredded Tex-Mex cheese
Directions
- Step 1To make salsa, combine tomato, onion, cilantro, and the juice of ½ lime in a bowl, set aside.
- Step 2Tear 2 pieces of foil that are about 12-inch by 18-inch and stack them on top of each other.
- Step 3Place tortilla on foil so it is slightly off center (so it will center once it’s folded) and cover half of it with cheese. Fold tortilla to create quesadilla. Fold up packet ensuring you have a tight seal.
- Step 4When ready to cook, place sealed packet on hot grill or over fire for about 5 minutes, flipping once.
- Step 5Remove packet from grill and allow to slightly cool. Unfold packet, top with salsa, and enjoy.
